The Huagang smoking furnace is mainly composed of three parts: furnace body, control box, and smoke chamber. The furnace body is a place for smoking, coloring, steaming, and drying. The upper part is equipped with a fan and copper coil tube. The function of the fan is to spread the hot air and smoke sucked up by the motor, achieving a uniform effect. Copper coil is used for drying function, and steam enters the copper coil through the steam reserved port. Copper has good thermal conductivity, fast heat transfer speed, and increases the contact space, resulting in a faster heating rate. The electric heating tube is located on both sides, with a fast heating rate and uniform heating. Two temperature probes, one measuring the temperature inside the furnace and the other measuring the temperature of the food, help us determine the aging status of the product based on its appearance. There are independent flues on both sides of the furnace, with exhaust and smoke outlets on the upper part and steam convection ports on the side. The purpose is to ensure consistent temperature and smoke inside the furnace, avoiding inconsistent temperature and smoke color. There is a drainage outlet at the bottom of the furnace to remove water droplets formed by condensation of steam when cooled.
